Velvety cauliflower with pistachios

Treat yourself with this recipe velvety Cauliflower with pistachios, an original association should surprise and pack your guests.

Ingredients for 2 people:

  • 1 mini cauliflower
  • 20g pistachios
  • 1 chicken bouillon cube
  • 25 cl milk
  • 1 olive oil net
  • salt and freshly ground pepper

Recipe of cream of cauliflower with pistachios

Heat a pan of hot water with the broth.

  • Rinse cauliflower florets and detail, then cut the foot coarsely. Simply throw the small leaves that are on it.
  • Cook the florets and other pieces in the pot of boiling water for 10 minutes. over medium / high heat.

Meanwhile, take a few pistachios, roughly mash them and set aside.

  • Grill over raw (no fat) remaining pistachios, 5 min. medium heat in a small pan, stirring 1 or 2 times.

Using a slotted spoon, place the cauliflower in the bowl of the mixer.

  • Add the olive oil, whole pistachios, milk and mix.
  • Adjust seasoning and blend again to obtain a very smooth soup.
  • If it is too thick, add a little of the cooking broth and blend again.

Ladle soup into two bowls and sprinkle some crushed pistachios.

For without mixer:

After cooking the florets as indicated above, enjoy them warm salad with pistachios walking believed in a pan.

Or simply taste the raw cauliflower with a little sauce with yogurt, mustard and small herbs.
