Zucchini tagliatelle

Made with limes and mint, it blends perfectly.

Ingredients for 6 people:

  • 5 beautiful zucchini
  • 1 lime
  • Some leaves of mint fresh
  • Olive oil
  • Salt and pepper

Tips: You can of course make the recipe with lemons and fresh herbs: chives, cilantro mint ... But today was a revelation. Another trick for a little more input sought, we can add small strips of smoked salmon in the salad.

1- Peel the skin of your fully zucchini with a peeler. Wash and wipe with a clean cloth. Using a peeler realize zucchini tagliatelle peeling zucchini in lengthwise. Stop when you reach the heart of the zucchini becomes soft and crumbly.

2. Wash and dry the mint leaves. Chop them above the tagliatelle.

3- Take the zest of lime and press to extract the juice. Book if you do not use right away.

4. Just before serving add your noodles lemon juice, zest, 3 tablespoons olive oil, salt and pepper. Stir and serve.

Lemon juice, oil, salt and pepper are added at the last moment for the tagliatelle remain crunchy.
