Soup with cauliflower leaves


You love cauliflower and you do not know what to do with leaves that are yet perfectly edible?

Treat yourself to this delicious soup cauliflower leaves and potato.

Ingredients for 4 people:

  • Leaves of a cauliflower
  • potatoes
  • 1 onion
  • 25 cl chicken stock
  • 1 tbsp fresh cream
  • 1 knob of butter
  • Salt and freshly ground pepper

Recipe soup cauliflower leaves:

Start by boiling a large pot’brine,

  • Peel the potatoes, wash, cut into pieces and dip them in the’water,
  • Cook for 15 minutes simmering fire

Remove the potatoes from the’when water’they are cooked and prepared cabbage,

  • Off all the leaves of cauliflower, then wash,
  • Peel and mince the’onion,

In another saucepan or Dutch oven,

  • Melt butter,
  • Y sweat the onion 2-3 min
  • Add cabbage leaves and cover a few minutes
  • Add the chicken stock and cook for 5 minutes
  • Add the potatoes and mix it all
  • You will add a little’water if necessary or if you l’like more or less thick.
  • Add the tablespoon of cream,
  • Salt and pepper
