Salmon with Asparagus

Spring finally indicates’arrival of asparagus, so here is a delicious salmon recipe based on which should delight your taste buds ...

Ingredients for 4 people:

  • 4 salmon steaks 150g approx
  • 24 asparagus (Ideally 12 green and 12 white)
  • 1 shallot
  • 1 wine vinegar
  • 10 cl of white wine
  • 15 cl cream
  • 6 cherry tomatoes
  • A few leaves of mesclun
  • 1 lemon
  • Dill, parsley, coriander, tarragon, chervil
  • Salt and pepper

Recipe Salmon with Asparagus:

The recipe for salmon asparagus is preferably carried out with fresh asparagus, c’ie in early spring.

Preparation of asparagus,

  • Peel the asparagus, wash and then tie them together
  • Boil a large pot’brine
  • Plunge the asparagus and cook for 20 minutes, drain and keep warm

Prepare the sauce,

  • During cooking asparagus
  • Blanch the’shallots in a pan with a little butter and’oil’olive
  • Add a dash of vinegar, 10 cl of white wine and lemon juice
  • Reduce by half and add 1 knob of butter and 15 cl cream
  • Finally add the chopped fresh herbs (dill, parsley, cilantro, tarragon, chervil)
  • Mix well and keep warm

Cook the salmon steaks,

  • First remove all the edges and clean them’clear water
  • Place the salmon steaks on the grill or in a frying pan and cook on their skin ten minutes

It is time to draw by placing on each plate, 1 salmon fillet, 6 asparagus, a few leaves of mesclun, 1 cherry tomato cut in two and the whole topped with sauce.
