L’poached egg with asparagus is a recipe that is preferably carried out in the spring, when the asparagus is freshly harvested.
- Start by cutting the base of the asparagus to keep only the tips of about 7-8 cm
- Peel the asparagus
- Bring a pan of’Water boiling
- Plunge the asparagus for 10-12 min
Achievement of poached eggs:
- Bring a large pan (or skillet) d’Water boiling
- Break each egg into a ladle and dip the ladle in’water so as to deposit’egg without breaking the yolk
