Duck breast with peaches

The preparation of duck breast with peaches is easy and fast, while the result is really delicious. We must be careful not not over cook the duck so that’they remain slightly pink in’inside.

  • Start by preparing the fruit
  • Peel and pit the peaches before cutting into 4
  • Hacking braces in duck skin of 1 mm’thick.
  • In a frying pan, place the duck breasts skin side down and cook 2 minutes on high heat to brown fat side
  • Return the duck breasts and brown 2 minutes of’other side
  • Remove the fat and cook for 5 minutes on each side
  • Book the duck breasts in foil
  • With the remaining fat, brown the fishing districts for 2 minutes, turning frequently
  • Ajourer d’First sherry vinegar and honey and finally the veal stock
  • Bring to the boil and stop the fire
  • Cut the breasts into 2 cm pieces
