Ling, that’also nicknamed julienne n’is never better than when accompanied’it is associated with a delicious vegetable julienne.
Ingredients for 4 people:
- 1 kg of ling net or julienne
- 500 g of julienne vegetables (frozen)
- 30g butter
- 35 cl of cider
- 2 c. tablespoons dried fish stock
- 4 c. tablespoons of cream
- 1 c. soup soy sauce
- 1 c. Coffee paprika
- Salt, pepper.
Recipe of cider julienne duo:
Pour the cider into a saucepan, add the broth, whisk, bring to boil, then adjust the heat so that the liquid simmers.
Reduce by half uncovered for 40 min.
Cut the fish fillets into pieces. Brown them in butter in a casserole.
Drain them with a slotted spoon and put julienne vegetables instead. Allowing it to return 10 min.
Put the fish in the pan, salt and pepper.
Pour the soy sauce in the cider reduction, add the paprika and cream.
Stir, pour into the casserole, cover and simmer 15 minutes before serving.
